Salted Caramel Brownies

• 100 g dark chocolate

• 1⁄4 cup coconut cream

• 1⁄4 cup raw cocoa powder

• 3 tbsp coconut oil

• 1⁄4 cup arrowroot flour

• 1⁄4 cup coconut flour sifted

• 1⁄4 tsp bi carb soda

• Salt

• 1⁄2 cup maple syrup

• 1⁄4 cup light olive oil

• 2 eggs whisked

• 1⁄4 cup cooked and mashed pumpkin

• 2 tbsp Almond butter

• 2 tbsp date paste


Pre heat oven 180*

Place chocolate, coconut cream, cocoa powder and coconut oil in a small saucepan over low heat until melted.

In a bowl combine arrowroot flour, coconut flour, bi carb soda and salt.

Add the melted chocolate mixture and the maple, olive oil, eggs and pumpkin to the dry ingredients.

Mix well and pour in greased baking tray, stir in almond butter and date paste. Bake 20 mins or until slightly moist in centre.
