Banana Loaf

INGREDIENTS

  • 1/3 cup coconut flour sifted
  • ¼ tsp salt
  • ½ tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • Nutmeg
  • 2 smashed bananas
  • 4 eggs
  • 2 tsp vanilla
  • ¼ cup maple syrup
  • ¼ cup coconut milk
  • 2 tbsp coconut oil melted

METHOD

  1. Place dry ingredients in bowl and whisk to combine.
  2. Add wet ingredients except coconut oil. Mix well.
  3. Slowly add coconut oil and let batter rest for 5 mins to thicken.
  4. Put in greased loaf tins and bake 25-30 minutes or until centre springs back when touched.
